It's usually fermented black bean and also some minced pork. Generally quite spicy as most Sichuan dishes are spicy due to the cold weather. Normal Chinese restaurants do have this but it's not close to the original one as these specialty restaurants import their Chili's from Sichuan province. That one is extremely super spicy.
